After a guided trip around your fields and work shops, we have given up Olive oil, and only use your oil above.
Great taste and a lovely alternative to olive oil & balsamic vinegar or just plain mayo.

Heat the oil in a pan on a medium heat, adding a pinch of salt at the outset.
Add the onion and cook until golden.
Add the flour and stir to incorporate.
Cook and stir for about a minute - that should be plenty of time for it to come together.
Turn the heat down and start adding the milk.
Initially, pour it in little by little, whisking thoroughly after each addition.
Turn the heat back up.
Keep cooking the mixture and allow it to thicken (5 minutes).
Add the peas and immediately turn the heat off.
Pour into a blender with the mint and pepper and blend.
Season to taste and serve.
