Flavour packed chicken skewers.

Ingredients
- 1/2 small white onion, finely chopped
- 1 tablespoon of Fussels Garlic Rapeseed Oil
- 150ml coconut milk
- 150g crunchy peanut butter
- 1 tablespoon of chilli paste
- 1 tablespoon of soy sauce
- 1 tablespoon of honey
- 1 teaspoon of tamarind paste
- 1 stalk of lemon grass
- 1/2 teaspoon of galangal paste
- 1 inch of fresh ginger, finely sliced
- Juice from 1/2 lime
- 400g chicken fillets, sliced
Method
Heat the oil in a pan and fry the onion until golden. Add the chilli paste, soy sauce, honey, spices and peanut butter and mix.
Pour in the milk and stir until thoroughly combined and starting to thicken.
Take off the heat and add the lime juice, leave to cool.
Preheat the oven to 200C.
Generously coat the chicken with the cooled satay sauce and then bake for 10-15 minutes until completely cooked through.
Serve!
