Ingredients
- 400g waxy potatoes, finely sliced
- 2 tablespoons of Fussels Garlic Rapeseed Oil
- 3 tablespoons of Fussels Extra Virgin Rapeseed Oil
- 8 eggs, beaten
- 1 tablespoon of smoked paprika
- 1 large white onion, sliced
- 100g broccoli, chopped into bite sized chunks
Method
Heat the oven to 200C.
Scatter the sliced potatoes and sliced onion on a baking tray, drizzle with Fussels garlic oil and season with salt and pepper.
Cover in foil and bake for 15 minutes.
Add the paprika and broccoli and cook uncovered for a further 5 minutes.
Beat the eggs in a large bowl and add the potato, broccoli and onion.
Heat the Fussels extra virgin rapeseed oil in an oven proof pan.
Pour the mixture into the pan and leave to cook until the bottom and sides are starting to turn golden.
Place in the oven for 20 minutes or until set.
Serve warm or cold.
