Basic Fluffy Pancakes with Mixed Berries & Nuts

Pancake Mix (8 pancakes)

  • Fussels Cold Pressed Rapeseed Oil, for frying
  • 250g Self Raising Flour
  • 1 tbsp Caster Sugar
  • 1 tsp Salt
  • 1 Medium Egg
  • 300ml Milk


  • Strawberries and blueberries (or your favourite)
  • Peanuts for added crunch
  • Your favourite syrup


    1. In a large bowl, sift the flour, sugar and salt, mix well.
    2. Wisk the egg and milk together, then combine with the dry ingredients, mixing with a wooden spoon.
    3. In a non-stick pan, heat a little Fussels oil and add 2-3 spoons of mixture.  Let the mixture spread in the pan.
    4. After a couple of minutes, when a few bubbles appear, flip over with a spatula and cook for a further couple of minutes.
    5. Repeat the process for the other pancakes.
    6. Top with berries, peanuts and syrup.
