Start by frying the onion in the heated rapeseed oil
Add the chorizo and fry until the sides are starting to turn brown
Add the chilli
After one minute, add the brandy, red wine, soy sauce and honey and simmer until the liquid has thickened and coated the chorizo - 10-15 minutes
Serve hot topped with the parsley
